Salami Egg and Cheese Pockets are a delicious handheld breakfast or snack option. These pockets are filled with scrambled eggs, savory salami, and melted cheese, all wrapped in a crispy, golden tortilla.

Ingredients

  • 4 flour tortillas
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup diced salami
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon butter

Instructions

  1. Heat a skillet over medium heat and melt butter. Crack the eggs into a bowl, whisk with salt and pepper, and pour them into the skillet. Scramble until cooked through, then remove from heat.
  2. In another skillet, heat olive oil over medium heat. Add the diced salami and cook for 2-3 minutes, until lightly crispy.
  3. Lay the tortillas flat on a clean surface. Place the scrambled eggs, salami, and both cheeses in the center of each tortilla.
  4. Fold the tortillas into a pocket, folding in the sides and then rolling them up tightly.
  5. Heat the same skillet over medium heat, and cook the pockets for 2-3 minutes on each side until golden brown and crispy, pressing gently with a spatula.
  6. Remove from the skillet and serve immediately, or slice for a more convenient snack.
