– 1 cup shelled pistachios, chopped
– 1/2 cup oat flour
– 1/2 cup vanilla protein powder
– 1/4 cup almond flour
– 1/4 cup honey or maple syrup
– 1/4 cup coconut oil, melted
– 1 large egg
– 1 teaspoon vanilla extract
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, combine oat flour, protein powder, almond flour, baking soda, and salt.
3. In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, egg, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and mix until combined.
5. Gently fold in the chopped pistachios.
6. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
