Ingredients

For the Waffles:

– 1 3/4 cups whole milk

– 3 large eggs, yolks and whites separated

– 1/3 cup vegetable oil

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 2 tablespoons cornstarch

– 1/4 cup brown sugar

– 2 teaspoons ground cinnamon

– 1 teaspoon ground nutmeg

– 1 tablespoon baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

For the Maple Butter:

– 1/2 cup unsalted butter, softened

– 1/4 cup powdered sugar

– 1 tablespoon pure maple syrup

– 1/2 teaspoon pure vanilla extract

– 2 teaspoons ground cinnamon

Instructions

1. Preheat your waffle iron to a medium-high setting.

2. In a medium bowl, whisk together the milk, egg yolks, vegetable oil, and vanilla extract. Set aside.

3. In a large bowl, whisk together the flour, cornstarch, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Set aside.

4. In a separate bowl, beat the egg whites with a handheld electric mixer until stiff peaks form.

5. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the beaten egg whites until fully incorporated.

6. Lightly grease the waffle iron with cooking spray or a small amount of oil.

7. Pour the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.

8. While the waffles are cooking, prepare the maple butter by combining the softened butter, powdered sugar, maple syrup, vanilla extract, and cinnamon in a bowl. Beat until smooth and creamy.

9. Serve the warm waffles with a dollop of maple butter and a drizzle of additional maple syrup if desired.

 

Notes

– For a lighter version, you can substitute half of the all-purpose flour with whole wheat flour.

– If you prefer a dairy-free option, use a non-dairy milk such as almond or oat milk and substitute the butter with a plant-based alternative.
