Brush both sides of the cauliflower steaks with olive oil and season with salt, pepper, and smoked paprika. Place the steaks on a baking sheet and roast in the preheated oven for about 25–30 minutes, flipping halfway through, until the edges are golden and the cauliflower is tender.
Prepare the Mushroom Sauce:
While the cauliflower roasts, heat 1 tbsp olive oil in a large skillet over medium heat. Add the chopped shallot and sauté until translucent (about 2–3 minutes). Stir in the garlic and sliced mushrooms, cooking until the mushrooms are browned and have released their moisture (about 5–7 minutes).
Pour in the vegetable broth and white wine, then add soy sauce and thyme. Let the sauce simmer for an additional 5 minutes until it slightly thickens. Season with salt and pepper to taste.
Assemble and Serve:
